Discover the complexity and joy of producing rum at the esteemed Flor de Caña distillery, where you will enjoy a tasting of slow-aged rum.
Depart from the pier and drive inland to the rural town of Chichigalpa. Located at the foot of the steep San Cristobal volcano, the town is surrounded by plains that are ideal for growing cotton and sugar cane. This latter crop has been especially important to Chichigalpa’s growth, as it’s a primary ingredient in the rum produced here since 1890.
Although the brand Flor de Caña wasn’t created until 1937, the company’s founders were among Nicaragua’s earliest rum makers. The fifth generation of the Pellas family now owns the distillery, which you will tour in depth. Flor de Caña rums are slow-aged, a process that starts with molasses from sugar cane harvested locally. After distillation, the rum is aged in small American white oak barrels without additives or accelerants that might alter the purity.
The finished products are outstanding, as you will see by sampling some exquisite 18-year-old Flor de Caña rum. Amber-colored and full-bodied, the rum is richly complex. Flor de Caña also produces a light-bodied 4-year-old rum, mahogany-hued 7-year-old rum best served on ice, and a toasty, tobacco-like rum that has been rated one of the world’s Top 10 spirits. There are even Kosher-certified rums, which are available in the Flor de Caña boutique.
Following your tour and tasting, you will return to the pier.
