Together with your Bon Appetit Culinary Chef, you'll visit the fishermans market outside of the city center, and then travel through the Bandol country to the Domaine de Souvious for a wine tasting and luncheon prepared by the 'Pope of Provence Cuisine" and afterwards complete a cooking class "Flavors of the Sea' on fish cookery techniques.
You'll meet your chef from the Bon Appetit Culinary Center for a short orientation to today's tour and the cuisine of Provence. The leaving the pier, you will be driven to the quaint fishermen's port of Sanary sur mer. Take a morning walk on the pier, where you will see floating the "Pointus", which are the colorful traditional fishermen's small boats in the Provence Region, and where you will meet the fishermen selling their own morning catch. The chef and local guide will identify today's fish and discuss the essential fish for the famous dish of Marseilles, bouillabaisse. From this fish market we will continue walking with your chef and guide to reach the produce and fresh farmers section of the market. Every day from 8.30am until 1:00pm the market is a buzz with locals shopping for tonight's dinner, maintaining a Provencal tradition of shopping daily and seasonally.
The tour will then continue from the market by bus through the famous Bandol region's vineyards and the medieval hill of Le Castellet to join the magnificent "Domaine de Souviou" which is a microcosm of the Provençal lifestyle and landscape. Upon arrival, the owner will invite you on a short walk, to get a glimpse of this 173 acre property, planted with hundred-years-old olive trees and rows of vines, cypress trees and lavender.
Once oriented to the property, you will be introduced to the charming master chef, Guy Gedda, the undisputed "pope" of the Provencal cuisine. Chef Guy is amongst the most revered chefs of France and the Riviera, including Alain Ducasse and Joel Robuchon, with whom he has worked over the deccades. He has cooked for royalty, Presidents and celebrities attending the Cannes Film Festival. Chef Guy's warm and welcoming smile will be waiting for you at the "Domaine" as he loves to familiarize his 'friends from Oceania' with the authenic cuisine of Provence. In an informal setting, Chef will serve you dishes he has prepared for our group, having shopped for the ingredients earlier in the morning. Along with each dish, you will be tasting wines from Provence, including the famous Bandol rose (Jacque Pepin's favorite!). The dishes will vary, but typically Chef Guy will serve roti, toasts with a tapenade, pannise, fish in a savory sauce, a meat dish and a lovely dessert. You'll also have time to taste the property's olive oils, and wander about the groves for a bit to walk-off your delicious 'Taste of Provence'.
Later, you'll return by bus to the pier, and after a short respite you will rejoin your chef and tour group for a private 60-minute cooking class entitled "Flavors of the Sea' where you will master three French techniques for cooking fish deliciously and perfectly - at home.
