Oceania Cruises Cooking Challenge: Oatmeal & Banana Pancake Recipe

Breakfast is the most important meal of the day, so I love to begin my day with healthy plant-based dishes that give you energy and feature wholesome ingredients like fresh fruit and nuts. I often prepare these Oatmeal & Banana Pancakes because they are very easy to make and fast too. You can even store the pancake mix for a few days in the refrigerator and make them fresh every morning. The best part of this delicious Oatmeal & Banana Pancake recipe is that it’s 100% plant-based and therefore easy to digest – plus, my kids love it.

Though we use our own cashew mylk recipe on board, I’ve included notes on substitutions to make it easier for everyone to join in. You can really use any type of milk that you have on hand, but if you want it to be a plant-based recipe, then stick with a plant-based milk.

OATMEAL & BANANA PANCAKE RECIPE
SERVES 4

INGREDIENTS
2 ripe bananas, peeled
1 ½ cup cashew, almond, soy or other plant-based milk (regular cow milk can also be used)
1 1/2 tablespoons maple syrup
1/2 cup oatmeal
2 1/4 cup oatmeal blended to flour (measure after blending)
2 teaspoons baking powder
2 tablespoons vegetable oil for cooking

TO FINISH
½ cup maple syrup
1 cup seasonal fruit
1 cup toasted pecans or walnuts

FOR THE PANCAKE MIX
In a bowl, mash the banana with a fork until puree. Whisk in the cashew milk and maple syrup. Add oats and oats flour, finish adding the baking powder. Mix well and let rest for 15 minutes.

FRY THE PANCAKES
Over warm flat grill or nonstick pan, add a little oil and spoon pancake mix into the pan to form 3-inch diameter pancakes. Sear over medium heat on both sides until cooked thoroughly and begins to brown slightly.

PLATING
Cut up the seasonal fruit of your choosing. Place the pancakes on a plate and garnish with the fruit and toasted pecans. Drizzle maple syrup on top and serve.
